Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C) and lightly spray a 9×13-inch baking dish with nonstick cooking spray to prevent sticking.
  2. Cook the Beef: In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat, then reduce heat to medium-low and stir in the salsa. Cook until the mixture is heated through, then remove from heat.
  3. Prepare Baking Dish: Pour half of the red enchilada sauce evenly into the bottom of the prepared baking dish to create a flavorful base layer.
  4. Fill Tortillas: Warm the tortillas according to package instructions to make them pliable. Spoon about 1/4 cup of the beef mixture down the center of each tortilla, then top with roughly 1 heaping tablespoon of shredded cheese. Roll each tortilla tightly and place seam-side down in the baking dish.
