Ingredients

  • 1 box strawberry cake mix with pudding in the mix (we used Pillsbury)
  • 2 large eggs
  • 1/3 cup vegetable or canola oil (80 ml)
  • 1 teaspoon vanilla extract (5 ml)
  • 3/4 cup powdered sugar (90 g)
  • 2 tablespoons strawberry preserves (40 g, Bonne Maman recommended)
  • 1 ½ tablespoons milk (22 ml)
  • 1 tablespoon cream cheese (15 g, optional)

Instructions

  1. Step 1: Preheat your oven to 350°F (175°C). Prepare an 8×8-inch baking pan by spraying it with nonstick spray or lining it with foil or parchment paper.
  2. Step 2: In a large bowl, combine the strawberry cake mix, eggs, oil, and vanilla extract. Mix well using a spoon or mixer until fully blended. Press the batter evenly into the prepared pan.
  3. Step 3: Bake for 18 to 22 minutes, or until the brownies are just set. Remove from the oven and allow them to cool completely in the pan.
  4. Step 4: For the frosting, whisk together powdered sugar, strawberry preserves, cream cheese (if using), and milk in a small bowl until smooth. Spread the frosting evenly over the cooled brownies.

Tips & Variations

  • For a tangier frosting, you can omit the cream cheese or substitute it with Greek yogurt.
  • Use high-quality strawberry preserves for the best flavor impact.
  • Line your pan with parchment paper for easier removal and cleaner edges.
  • Add fresh sliced strawberries on top of the frosting for extra freshness and texture.

Storage

Store the strawberry brownies in an airtight container in the refrigerator for up to 5 days. Allow them to come to room temperature before serving or warm gently in the microwave for about 10 seconds to soften the frosting.

How to Serve

A set of 16 square pink frosted bars arranged neatly in a 4x4 grid on a white marbled surface. Each bar shows a smooth, creamy pink frosting layer on top with tiny red specks, hinting at strawberry flavor, while the cake layer underneath is a slightly deeper pink. The bars have clean but soft edges, with some minor cracks on the frosting surface. Two fresh strawberries with green tops are placed near the top right corner of the squares. photo taken with an iphone --ar 4:5 --v 7
