  • Author: Matteo
  • Total Time: 20-22 minutes
  • Yield: 1 serving 1x
  • Diet: Vegan

Description

This air fryer eggless mug cake is a quick, easy, and vegan-friendly dessert perfect for satisfying single-serve chocolate cravings. Made without eggs or butter, it uses simple pantry staples and is baked in an air fryer for a moist and tender texture, making it an ideal hassle-free sweet treat.

Ingredients

Scale

Dry Ingredients

  • 4 tbsp All purpose flour (maida)
  • 1 tbsp Unsweetened cocoa powder
  • 1/4 tsp Baking powder
  • A pinch Baking soda
  • A pinch Salt
  • 2 1/2 tbsp Granulated sugar

Wet Ingredients

  • 3 tbsp Milk or plant-based milk (soy, almond, oat)
  • 2 tbsp Odourless flavourless cooking oil (sunflower or avocado oil)
  • 1/2 tsp Vanilla extract

Optional Toppings

  • 2 tsp Chocolate chips (vegan if desired)
  • Chopped walnuts or nuts (optional)

Instructions

  1. Combine Dry Ingredients: In a ceramic ramekin or air fryer safe mug, add the all-purpose flour, cocoa powder, baking powder, baking soda, salt, and granulated sugar. Mix thoroughly to ensure even distribution of the leavening agents and cocoa powder. Meanwhile, preheat your air fryer to 170°C (340°F).
  2. Add Wet Ingredients and Mix Batter: Pour in the milk, oil, and vanilla extract into the dry mixture in the mug. Stir well until the batter is smooth and free of lumps, achieving a ribbon-like consistency that is neither too runny nor too thick.
  3. Add Toppings: Sprinkle chocolate chips or chopped nuts on top of the batter to add texture and extra flavor.
  4. Air Fry the Mug Cake: Place the ramekin or mug carefully into the preheated air fryer basket and bake at 170°C (340°F) for 15 to 17 minutes. After 15 minutes, check the center by inserting a skewer or toothpick; if it comes out clean, the cake is done. Otherwise, air fry for an additional 2 to 3 minutes as needed.
  5. Cool and Serve: Carefully remove the hot mug from the air fryer, let it rest for 1-2 minutes, and serve warm. For an indulgent experience, enjoy with a scoop of vanilla ice cream or drizzle with chocolate sauce.

Notes

  • Ensure the mug or ramekin is labeled oven-safe or air fryer-safe; microwave-safe mugs may not be suitable.
  • Adjust the sugar quantity if you prefer a less sweet cake—2 tbsp works well for a milder sweetness.
  • Use any plant-based milk to keep this recipe vegan-friendly.
  • The baking time may vary depending on the air fryer model and size; always check the cake’s doneness with a skewer.
  • Leftover mug cake can be stored covered in the fridge for 1-2 days; reheat in the microwave or air fryer before serving.
  • For a coffee twist, add 1/4 tsp instant coffee powder to the batter along with vanilla extract.
  • Instead of oil, melted butter can be used if not strictly vegan.
