Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper to prevent sticking and allow even baking.
  2. Prepare Puff Pastry: Roll out the thawed puff pastry sheets slightly on a floured surface for easier handling. Using a 2-inch round cutter, cut approximately 24 circles from the dough to create uniform bites.
  3. Create Indentations: Using your thumb or the back of a spoon, gently press the center of each pastry circle to form a small well. This indentation will hold the goat cheese filling during baking.
  4. Fill with Goat Cheese: Place about 1 tablespoon of goat cheese into the indentation of each pastry circle, ensuring the cheese is centered and evenly distributed.
  5. Bake: Arrange the filled pastry rounds on the prepared baking sheets and bake for 8–10 minutes, or until the puff pastry is golden and puffed up.
  6. Drizzle Honey and Garnish: As soon as the bites come out of the oven, drizzle approximately ½ teaspoon of honey over each. Sprinkle with chopped fresh thyme and, if desired, add a pinch of crushed red pepper flakes or chopped nuts for extra flavor and texture.
