Ingredients
Scale
Chicken Mixture
- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1 cup buffalo sauce
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
Assembly
- 8 flour tortillas (8-inch)
- Chopped green onions, for garnish
- Sour cream, for serving
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot and ready for baking the taquitos.
- Cook Chicken: In a skillet over medium heat, cook the chicken breasts thoroughly for about 20 minutes until no longer pink inside. Remove from heat and allow to cool before shredding the chicken into fine pieces.
- Mix Filling: In a medium bowl, combine the shredded chicken with buffalo sauce and softened cream cheese. Mix well until all ingredients are evenly incorporated and creamy.
- Assemble Taquitos: Lay each flour tortilla flat. Spoon an even amount of the buffalo chicken mixture onto each tortilla. Sprinkle shredded cheddar cheese over the filling, then roll the tortillas tightly. Use toothpicks to secure each roll if necessary to prevent unrolling.
- Prepare for Baking: Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper. This helps them bake evenly and prevents sticking.
- Bake: Bake the taquitos in the preheated oven for 15-20 minutes, until the tortillas are golden brown and crispy on the edges.
- Serve: Remove toothpicks if used, and serve the taquitos hot. Garnish with chopped green onions and a dollop of sour cream for added flavor and creaminess.
Notes
- For extra crispiness, lightly brush the taquitos with a bit of oil before baking.
- You can adjust the amount of buffalo sauce to control the spice level.
- Use corn tortillas for a gluten-free version, but warming them beforehand helps prevent cracking.
- Leftover taquitos can be refrigerated for up to 3 days and reheated in an oven or air fryer to retain crispness.
- Shredded rotisserie chicken can be used as a time saver instead of cooking chicken breasts.
