Marinade

  • 1/3 cup coca-cola
  • 1/4 cup brown sugar
  • 1/4 cup onion (finely chopped)
  • 1/4 cup soy sauce
  • 1/4 cup ketchup
  • 1/4 cup apple cider vinegar
  • 3 garlic cloves (minced)
  • 2 tsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1/2 tsp sriracha

Instructions

  1. Slice the Pork: Slice each pork chop into four even strips from the short side, resulting in 16 strips from all chops.
  2. Prepare and Marinate: Combine coca-cola, brown sugar, finely chopped onion, soy sauce, ketchup, apple cider vinegar, minced garlic, lemon juice, salt, black pepper, red pepper flakes, and sriracha in a large bowl. Reserve about 1/4 of the marinade for basting later. Toss the pork strips in the remaining marinade, cover, and refrigerate for at least 4 hours or overnight.
  3. Skewer the Pork: Thread 2 to 4 pork strips lengthwise onto each skewer, fitting as many as possible per skewer.
  4. Grill the Skewers: Preheat your grill to medium heat. Lightly oil the grill grates, then place the pork skewers on the grill. Close the lid and cook, turning every 3-4 minutes. Baste the skewers with the reserved marinade between turns. Continue grilling until the internal temperature of the pork reaches 160°F (71°C). Adjust timing as necessary since grill temperatures can vary.
  5. Serve: Remove the pork skewers from the grill and serve hot with your favorite BBQ side dishes.
