Ingredients
Scale
Marinade and Chicken
- 2 tablespoons soy sauce
- 1 tablespoon dark soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 4 pieces boneless chicken thighs
Broth and Cooking
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 cups chicken broth
- 1 teaspoon sesame oil
- 2 tablespoons vegetable oil
To Serve
- 2 cups cooked white rice
- Chopped green onions (for garnish)
- Sesame seeds (for garnish)
Instructions
- Prepare the Marinade: In a bowl, combine soy sauce, dark soy sauce, brown sugar, honey, and rice vinegar until the sugar is dissolved and the mixture is well blended.
- Marinate the Chicken: Place the boneless chicken thighs into the marinade, ensuring they are fully coated. Let them marinate for at least 20 minutes to absorb the flavors.
- Caramelise the Chicken: Heat vegetable oil in a pan over medium-high heat. Add the marinated chicken thighs and sear each side until caramelised and cooked through, about 4-5 minutes per side depending on thickness. Remove the chicken from the pan and set aside.
- Sauté Aromatics: In the same pan, add minced garlic and grated fresh ginger. Sauté for 1-2 minutes until fragrant and lightly golden, being careful not to burn the garlic.
- Prepare the Broth: Pour in the chicken broth and sesame oil into the pan with the garlic and ginger. Bring the mixture to a simmer and let it reduce slightly to concentrate the flavors, about 5 minutes.
- Rewarm Chicken: Slice the cooked chicken thighs into strips and return them to the simmering broth. Warm the chicken through for 2-3 minutes to meld the flavors.
- Serve: Spoon the cooked white rice into serving bowls and ladle the garlic ginger broth with sliced caramelised chicken over the top.
- Garnish: Sprinkle chopped green onions and sesame seeds on top to add a fresh, nutty finish and a pop of color.
Notes
- Marinating the chicken longer, up to 1 hour, will enhance the flavor even more.
- If you prefer a thicker sauce, you can reduce the broth further or add a cornstarch slurry to thicken it before adding the chicken back in.
- Use boneless, skinless chicken thighs for juiciness; chicken breasts can be used but may be less moist.
- Serve with steamed or stir-fried vegetables for a complete meal.
- Adjust the sweetness by varying the amount of honey and brown sugar to your taste preference.
