  • 4 pieces boneless chicken thighs

Instructions

  1. Prepare the Marinade: In a bowl, combine soy sauce, dark soy sauce, brown sugar, honey, and rice vinegar until the sugar is dissolved and the mixture is well blended.
  2. Marinate the Chicken: Place the boneless chicken thighs into the marinade, ensuring they are fully coated. Let them marinate for at least 20 minutes to absorb the flavors.
  3. Caramelise the Chicken: Heat vegetable oil in a pan over medium-high heat. Add the marinated chicken thighs and sear each side until caramelised and cooked through, about 4-5 minutes per side depending on thickness. Remove the chicken from the pan and set aside.
  4. Sauté Aromatics: In the same pan, add minced garlic and grated fresh ginger. Sauté for 1-2 minutes until fragrant and lightly golden, being careful not to burn the garlic.
  5. Prepare the Broth: Pour in the chicken broth and sesame oil into the pan with the garlic and ginger. Bring the mixture to a simmer and let it reduce slightly to concentrate the flavors, about 5 minutes.
  6. Rewarm Chicken: Slice the cooked chicken thighs into strips and return them to the simmering broth. Warm the chicken through for 2-3 minutes to meld the flavors.
  7. Serve: Spoon the cooked white rice into serving bowls and ladle the garlic ginger broth with sliced caramelised chicken over the top.
  8. Garnish: Sprinkle chopped green onions and sesame seeds on top to add a fresh, nutty finish and a pop of color.

  • Marinating the chicken longer, up to 1 hour, will enhance the flavor even more.
