  • 12 ounces broccoli florets, chopped into small pieces (about 340 grams or a medium-sized head)
  • 6 small-medium Yukon Gold potatoes, peeled and chopped (approximately 1200 grams or 2.5 pounds)
  • 3 cloves garlic, minced
  • 1/4 cup chopped parsley
  • 1/4 cup chopped green onion

  • 2 Tbsp olive oil
  • 1/4 cup butter
  • 1/2 cup milk
  • 7 ounces shredded cheddar cheese (about 200 grams or just over 2 cups)
  • Salt and pepper, to taste

Instructions

  1. Preheat Oven and Prepare Ingredients: Preheat your oven to 375°F (190°C). While the oven heats, prepare the potatoes by peeling and chopping them. Also chop the broccoli into small florets, mince the garlic, and chop the parsley and green onion.
  2. Cook Potatoes: Place the chopped potatoes in a large pot and cover them with water. Cover the pot with a lid and bring the water to a boil over medium-high heat. Once boiling, reduce the heat to maintain a simmer, keeping the pot covered, and cook for about 15 minutes or until the potatoes are fork-tender.
  3. Roast Broccoli: Meanwhile, place the chopped broccoli florets in a large casserole or baking dish. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly and spread the broccoli in a single layer. Bake in the preheated oven for 15 minutes until slightly tender and roasted. Remove from the oven and set aside.
  4. Mash Potatoes: Once the potatoes are tender, drain the water and return the potatoes to the same pot. Add the butter, milk, minced garlic, salt, and pepper. Use a potato masher to mash everything together until creamy but still slightly textured. Stir in the chopped parsley and green onion. Taste and adjust the seasoning with additional salt and pepper if needed.
  5. Combine Casserole: Add the mashed potatoes to the casserole dish with the roasted broccoli. Gently stir to combine the ingredients well. Mix in half of the shredded cheddar cheese, then spread the mixture evenly in the dish. Sprinkle the remaining cheddar cheese over the top in an even layer.
  6. Bake Casserole: Return the casserole dish to the oven and bake for 15 to 20 minutes, or until the cheese is completely melted and bubbling. Serve hot as a comforting side dish.

Notes

  • Yukon Gold potatoes are preferred for their creamy texture, but russet potatoes can also be used.
  • For a richer casserole, substitute some or all of the milk with cream or half-and-half.
  • You can add cooked bacon or sautéed onions for extra flavor.
