- 4 tablespoons unsalted butter, divided
- 1 (8 oz) block cheddar cheese, shredded
- 8 large eggs, cooked your favorite way and seasoned with salt and pepper

- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt, plus more to taste
- ½ teaspoon ground black pepper, plus more to taste
Instructions
- Melt Butter and Cook Pork: Melt 1 tablespoon butter in a very large non-stick skillet over medium-high heat. Add the cubed fresh pork and cook for 5 minutes, stirring every 1 to 2 minutes to ensure even cooking.
- Add Remaining Butter and Potatoes: Add the remaining 3 tablespoons of butter to the skillet and stir to melt. Arrange the pork in an even single layer. Add the frozen potatoes o’brien, breaking up any clumps, and spread evenly over the pork.
- Season and Cook Potatoes: Sprinkle garlic powder, onion powder, salt, and pepper over the potatoes and pork. Cover the skillet and cook for about 15 minutes, stirring every 3 to 5 minutes to prevent burning and promote browning, until the potatoes are tender and golden brown.
- Add Cheese: Stir in the shredded cheddar cheese and continue stirring until the cheese has melted and is well incorporated.
- Season to Taste and Serve: Taste the skillet and adjust seasoning if needed. Serve hot topped with eggs cooked your favorite way, alongside toast or fruit for a complete meal.
