  • Diet: Gluten Free

Description

Delicious and refreshing Chocolate Strawberry Yogurt Clusters that combine the natural sweetness of strawberries and the creaminess of Greek yogurt, coated in rich semi-sweet chocolate. These bite-sized frozen treats are perfect for a healthy snack or dessert, easy to make, and visually appealing with a perfect balance of flavors and textures.

Ingredients

Scale

Yogurt Mixture

  • 1 1/2 cups chopped strawberries
  • 1 cup plain Greek yogurt
  • 1 tbsp honey
  • 1 tsp vanilla extract

Chocolate Coating

  • 1 cup semi-sweet chocolate chips
  • 2 tbsp coconut oil

Instructions

  1. Prepare Yogurt Mixture: In a large bowl, combine the chopped strawberries, plain Greek yogurt, honey, and vanilla extract. Stir the ingredients thoroughly until evenly mixed to achieve a smooth and fruity yogurt base.
  2. Form Clusters: Using a spoon, scoop about 2 tablespoons of the yogurt mixture and place them onto a parchment paper-lined baking sheet or large plate, shaping them into clusters. You should be able to form approximately 10 clusters.
  3. Freeze Clusters: Place the baking sheet with the shaped yogurt clusters into the freezer. Freeze them until they become completely solid, which will take about 1 to 2 hours.
  4. Melt Chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 15 to 30-second intervals, stirring after each interval, until the chocolate mixture is fully melted and smooth.
  5. Dip Clusters in Chocolate: Remove the frozen yogurt clusters from the freezer. Using a spoon, carefully dip each cluster into the melted chocolate to coat them thoroughly. Place the coated clusters back onto the parchment-lined baking sheet. Optionally, sprinkle a small amount of sea salt on top for added flavor.
  6. Re-freeze and Serve: Return the chocolate-coated clusters to the freezer for a few minutes to allow the chocolate to harden and the yogurt to solidify slightly. Once set, enjoy these tasty frozen treats immediately or keep them stored in the freezer until ready to serve.

Notes

  • Use parchment paper to prevent clusters from sticking to the baking sheet.
  • Chilling the yogurt mixture before scooping can help maintain cluster shape better.
  • Add a pinch of sea salt after dipping in chocolate to enhance the flavor contrast.
  • Store leftover clusters in an airtight container in the freezer to keep them fresh.
  • For a dairy-free version, substitute Greek yogurt with coconut yogurt and ensure chocolate chips are dairy-free.
