Ready in just 20 minutes, this recipe offers a perfect balance of crispy texture and zesty glaze without deep frying.

Ingredients

Scale

Chicken and Breading

  • 4 chicken breasts (lightly pounded to even thickness)
  • 1 cup all-purpose flour
  • 2 eggs (beaten)
  • 2 cups cornflakes (crushed)
  • 1 tablespoon garlic powder
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • Oil spray

Honey Lemon Garlic Glaze

  • 2 tablespoons sesame oil
  • 3 cloves garlic (minced)
  • Juice of 1 lemon
  • 1/2 cup honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons soy sauce
  • 1/2 tablespoon crushed red pepper flakes
  • 2 tablespoons cornstarch slurry (mixture of cornstarch and water)

Instructions

  1. Pound the chicken: Place the chicken breasts between two pieces of plastic wrap and lightly pound them to an even thickness to ensure they cook evenly throughout.
  2. Season the chicken: Sprinkle the chicken breasts evenly with garlic powder, salt, and black pepper for flavor.
  3. Prepare breading station: Arrange three shallow dishes – flour in the first, beaten eggs in the second, and crushed cornflakes in the third – for dipping and coating the chicken.
  4. Bread the chicken: Coat each chicken breast in flour, then dip it into the beaten eggs, and finally press firmly into the crushed cornflakes to ensure the coating sticks well for maximum crispiness.
  5. Air fry the chicken: Place the breaded chicken breasts into the air fryer basket in a single layer. Lightly spray with oil. Air fry at 425°F (218°C) for 10 minutes, flipping halfway through cooking, until chicken is golden brown and reaches an internal temperature of 165°F (74°C).
  6. Make the honey lemon garlic glaze: While the chicken cooks, combine sesame oil, minced garlic, lemon juice, honey, salt, black pepper, soy sauce, and crushed red pepper flakes in a small saucepan. Simmer over medium heat for about 2 minutes, stirring occasionally.
  7. Thicken the glaze: Stir in the cornstarch slurry and continue cooking until the sauce thickens slightly, about 1-2 minutes.
  8. Coat the chicken: Once the chicken is cooked, either dunk each piece into the glaze or brush the sauce generously over the chicken breasts to coat them fully.
  9. Serve and enjoy: Plate the glazed crispy chicken immediately and enjoy this flavorful, crunchy dish hot.

Notes

  • Make sure the chicken breasts are pounded to an even thickness to ensure even cooking.
  • Press the cornflake coating firmly onto the chicken for extra crispiness.
  • Adjust the amount of crushed red pepper flakes based on your preference for spiciness.
  • If you don’t have an air fryer, you can bake the chicken in a preheated 425°F oven for about 25-30 minutes or until cooked through and crispy.
  • Use a meat thermometer to confirm the chicken is cooked to an internal temperature of 165°F for safe consumption.
