Scale
Vegetables & Herbs
- 3 medium Zucchini (firm and vibrant)
- 1 tablespoon Fresh Dill (or substitute with other herbs)
- 1 tablespoon Fresh Parsley (or other herbs as desired)
Dairy & Eggs
- 1 cup Feta Cheese (can substitute with dairy-free cheese for vegan option)
- 2 large Eggs (replace with 1/4 cup flaxseed meal mixed with 1/2 cup water for vegan option)
Dry Ingredients & Spices
- 1 cup Panko Bread Crumbs (or regular breadcrumbs)
- 1 teaspoon Garlic Powder (or 1 minced fresh garlic clove)
- 1 teaspoon Onion Powder (optional, or use finely chopped fresh onion)
- 1/2 teaspoon Black Pepper (adjust to taste)
- 1/4 teaspoon Cayenne Pepper (optional for heat)
Oils
- 2–3 tablespoons Cooking Oil (for frying)
Instructions
- Grate Zucchini: Grate three medium zucchinis using a box grater or food processor. Then, squeeze out the excess moisture thoroughly using a clean kitchen towel to prevent soggy fritters.
- Mix Ingredients: In a large mixing bowl, combine the drained zucchini with crumbled feta cheese, panko breadcrumbs, and eggs. Add fresh dill, parsley, garlic powder, onion powder, black pepper, and cayenne pepper. Mix the entire mixture well until fully homogeneous.
- Heat Skillet: Place a non-stick skillet over medium heat and drizzle in 2 to 3 tablespoons of cooking oil. Allow the oil to heat until shimmering but not smoking, preparing for frying the fritters.
- Form Fritters: Scoop spoonfuls of the zucchini mixture and flatten them into round patties or balls. Space them evenly in the hot skillet without overcrowding to ensure even cooking.
- Cook First Side: Let the fritters cook for about 3 to 4 minutes on one side until they turn golden brown and develop a crispy exterior.
- Flip and Cook Second Side: Carefully flip each fritter and cook for another 3 to 4 minutes until the other side is also golden brown and cooked through.
- Drain Excess Oil: Remove the cooked fritters from the skillet and place them on a plate lined with paper towels to absorb any excess oil and maintain crispiness.
- Serve: Serve the zucchini feta balls warm, optionally accompanied by tzatziki sauce or your favorite dipping sauce for added flavor.
Notes
- To make this recipe vegan, replace feta with dairy-free cheese and eggs with a flaxseed meal and water mixture.

- Feel free to adjust spices such as cayenne pepper to control the heat level.
- These fritters can be served as an appetizer, snack, or side dish.
