- 4 green onions, white and green parts thinly sliced, plus more for garnish
- 2 large carrots, peeled and julienned or 1 cup shredded carrots
- 3 cups fresh spinach
Dumplings
- 1 (1½ pound) bag frozen dumplings (potstickers or mini potstickers)

- 1 teaspoon sesame seeds (optional)
Instructions
- Heat oil, garlic, and ginger: In a large pot, heat the toasted sesame oil over medium heat. Add the minced garlic and fresh ginger, cooking while stirring often until fragrant, about 3 minutes.
- Add broth ingredients and bring to a boil: Pour in the chicken stock, low sodium soy sauce, sliced green onions, and julienned carrots. Increase heat to high and bring the mixture to a boil.
- Simmer until vegetables are tender: Lower the heat to medium-low and cook, stirring occasionally, for 5 minutes or until the carrots are tender but still maintain some bite.
- Add dumplings and cook until done: Add the frozen dumplings to the pot and return to a boil over high heat. Cook, stirring gently to prevent sticking, until dumplings are cooked through, about 4 minutes.
- Wilt spinach and season: Remove the pot from heat and stir in the fresh spinach leaves. Stir until they are wilted, about 4 minutes. Season the soup with sea salt to taste.
- Serve with garnishes: Ladle the soup into bowls and top with additional sliced green onions and sesame seeds if desired. Serve warm and enjoy.
Notes
- You can substitute vegetable broth to make this soup vegetarian; just use vegetarian dumplings.
- Frozen dumplings should not be thawed before adding to the soup to prevent them from breaking apart.
- For extra heat, add a dash of chili oil or crushed red pepper flakes when serving.
- If you prefer, substitute spinach with baby bok choy or napa cabbage for a different texture.
