- 1 (13.8 oz) roll Pillsbury Classic Pizza Crust
- Cooking spray, for greasing muffin tin
- 20 mini muffin paper liners
- Pie weights, uncooked rice, or dried beans (for blind baking)

- 1/2 cup hummus (homemade or your favorite brand)
- 1/2 cup diced cucumber
- 5 cherry tomatoes, quartered
- 1/8 teaspoon sea salt
Instructions
- Preheat and Prepare Muffin Tin: Preheat your oven to 400°F (204°C) and lightly spray 20 mini muffin cups with cooking spray. Set aside mini muffin paper liners and pie weights, rice, or dried beans for baking.
- Roll Out Dough: Form the pizza dough into a roughly 14-inch by 12-inch rectangle. This doesn’t have to be exact, just close enough for uniform cutting.
- Cut Dough Circles: Use a 2 ½-inch round cookie cutter to cut out 20 circles from the dough. Press each circle firmly into the muffin cups to form a cup shape.
- Dock Dough to Prevent Puffing: Use a fork to poke 3 to 4 holes in the bottom of each dough cup. This allows steam to escape and prevents excessive puffing during baking.
- Add Liners and Weights: Place a mini muffin liner inside each dough-pressed muffin cup, then fill each liner with pie weights, uncooked rice, or dried beans. This will ensure the cups hold their shape while baking.
- Bake Pizza Cups: Bake the cups in the preheated oven for 8 to 10 minutes or until the edges turn light golden brown. Once baked, transfer the cups to a cooling rack and let them cool completely.
- Fill and Garnish: When cooled, fill each pizza cup with a heaping teaspoon of hummus. Top with a few pieces of diced cucumber and a quartered cherry tomato. Sprinkle each with a light dash of sea salt to enhance the flavors.

- You can fill the hummus cups up to 1 hour in advance. Cover with plastic wrap and refrigerate to keep the vegetables fresh and prevent the hummus from drying out.
