  • 23 tbsp Lemon juice

  • 3/4 cup Cream (30-35% fat)

  • 3/4 cup Icing sugar
  • 3/4 cup Lemon curd (Homemade or store-bought)

For Assembly and Decoration

  • 2024 Ladyfinger cookies
  • 2 tbsp Lemon curd (for topping, optional)
  • Lemon slices (for garnish)

Instructions

  1. Prepare the Serving Dish: Select a non-metallic serving dish of your choice, such as round, square, or rectangular. A 6″x9″ casserole dish works well for this recipe.
  2. Make the Lemon Syrup: In a small saucepan, combine water, granulated sugar, and lemon peels. Heat over medium until it comes to a simmer, then let it cook gently for 5 minutes to extract flavors.
  3. Cool and Finish Syrup: Remove from heat and let the syrup cool. Once cool, whisk in fresh lemon juice, discard the lemon peels, and transfer the syrup into a bowl. Set aside.
  4. Whip the Cream: In a chilled bowl, whip the cream for about 4-5 minutes until soft to medium peaks form, ensuring a light and airy texture.
  5. Prepare Mascarpone Mixture: In a separate large bowl, whisk together mascarpone cheese and icing sugar until smooth. Gently fold in the whipped cream and lemon curd, taking care not to overmix to maintain fluffiness.
  6. Assemble the Tiramisu – First Layer: Quickly dip each ladyfinger one at a time into the lemon syrup and arrange a single layer at the bottom of the serving dish.
  7. Add Filling: Spread half of the mascarpone-lemon curd mixture evenly over the layer of soaked ladyfingers.
  8. Assemble the Second Layer: Repeat the process by dipping ladyfingers in lemon syrup and placing them over the filling layer.
