Fillo Pastry
- 375g Antoniou Fillo Pastry
- 150g unsalted butter, melted
Filling
- 2 eggs
- 1 cup thickened cream (240ml)
- Salt & pepper, to taste
- 500g double brie cheese, cut into slices
- 6 figs, thinly sliced
- 3 sprigs fresh thyme
Instructions
- Prepare Fillo Pastry: Remove the packet of fillo pastry from the fridge, keeping it in its plastic bag, and allow it to come to room temperature to prevent tearing during handling.
- Preheat Oven and Prepare Pan: Preheat your oven to 180°C (fan forced). Brush a 24cm by 34cm rectangular baking pan with some melted butter to prevent sticking.
- Mix Egg and Cream: In a mixing jug, whisk together the eggs, thickened cream, salt, and pepper until fully combined. Set aside for later use.
- Fold Fillo Pastry: Lay two sheets of fillo pastry on your workspace, one on top of the other, with the short sides facing you. Using your fingers, fold the pastry into a concertina (accordion) shape. Transfer the folded fillo pastry to the prepared baking pan. Repeat until the pan is full with all folded fillo pastry.
- Assemble the Pie: Drizzle the melted butter evenly over the fillo layers using a pastry brush. Nestle slices of double brie cheese and thinly sliced figs into the pastry layers. Pour the egg and cream mixture over the top. Finally, sprinkle fresh thyme leaves over the pie to add aromatic flavor.
- Bake: Place the pan in the preheated oven and bake for approximately 35 minutes or until the pastry is golden brown and crisp.
- Serve: Remove from the oven and serve immediately while warm to enjoy the contrast of the crispy pastry and melty cheese with sweet figs.
Notes
- You can use any shape baking dish; just adjust the fillo pastry folding to fit your pan.
- Allowing the fillo pastry to come to room temperature helps prevent tearing.
- Use fresh thyme for the best aromatic flavor, but dried thyme can be substituted if necessary.
- For a dairy-free option, substitute the brie with a plant-based cheese and use a non-dairy cream alternative.
