Ingredients
Scale
Pasta
- 400g spaghetti
Sausage and Vegetables
- 250g Italian sausage
- 3 cups fresh spinach
- 4 cloves garlic, minced
Other Ingredients
- 4 tablespoons butter
- 1 tablespoon olive oil
- 1 cup shredded mozzarella cheese
- 1/3 cup grated Parmesan cheese
- Salt to taste
- Black pepper to taste
Instructions
- Cook the spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente according to package instructions, about 8-10 minutes. Drain and set aside.
- Brown the sausage: Heat olive oil in a large skillet over medium heat. Add the Italian sausage, crumbling it as it cooks. Sauté until browned and fully cooked, about 6-8 minutes. Remove the sausage from the skillet and set aside.
- Sauté garlic: In the same skillet, add butter and minced garlic. Cook for about 1 minute until the garlic is fragrant but not browned.
- Cook the spinach: Add fresh spinach to the skillet and sauté until wilted, which should take about 2-3 minutes.
- Combine ingredients: Return the cooked sausage to the skillet, then add the drained spaghetti. Toss everything together so that the noodles are well coated with the garlic butter sauce and mixed evenly with the sausage and spinach.
- Melt the cheese: Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the pasta mixture. Cover the skillet with a lid and let it sit for 2-3 minutes over low heat to allow the cheese to melt.
- Season and serve: Season the dish with salt and black pepper to taste. Toss gently to combine, then serve hot for a comforting and flavorful meal.
Notes
- You can substitute Italian sausage with turkey sausage for a leaner option.
- For a spicier kick, use spicy Italian sausage or add red pepper flakes when sautéing garlic.
- Fresh spinach can be replaced with kale or other leafy greens as preferred.
- To make it vegetarian, omit the sausage and add sautéed mushrooms or plant-based sausage alternatives.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days and reheated gently on the stovetop.
