Bread and Oil
- 10–12 baguette slices (about 1/2″ thick)
- 6 tbsp olive oil, divided
- 1 tsp garlic powder
Avocado Topping
- 1 avocado
- Juice of 1/2 lime
- 1/4 tsp salt
- 1/4 tsp black pepper
Shrimp
- 12 large shrimp, peeled and deveined
- 2 big garlic cloves, cut into slivers
- 3/4 tsp smoked paprika
- 1/2 tsp cumin
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat and Prepare Crostini: Preheat the oven to 350°F and move the oven rack to the top position. Line a baking sheet with parchment paper and arrange the baguette slices in an even layer.
- Brush and Bake Bread: In a small bowl, mix 3 tablespoons of olive oil with garlic powder. Brush both sides of each baguette slice with this oil and garlic mixture. Bake for 10-15 minutes until the crostini are crisp and golden to your liking.
- Mash Avocado: In a small bowl, mash the avocado well. Add lime juice, salt, and black pepper, mixing to combine. Set this creamy avocado topping aside.
- Cook Shrimp: While the crostini are baking, heat the remaining 3 tablespoons of olive oil in a large skillet over low heat. Add the garlic slivers and cook gently for about 2 minutes to infuse the oil. Increase the heat to medium-high and add the shrimp along with smoked paprika, cumin, salt, and black pepper. Stir well to coat evenly and cook, turning shrimp once or twice, until they turn pink and are cooked through, about 5 minutes.
- Assemble and Serve: Spread each crispy crostini with mashed avocado and top with one or more cooked shrimp. Serve immediately while warm and fresh.

- For extra crispiness, broil the crostini for 1-2 minutes after baking, watching carefully to prevent burning.
- Use fresh lime juice for best flavor in the avocado topping.
