Pork Marinade
- 1 ½ pounds boneless pork chops or tenderloin
- 2 tablespoons fresh ginger, grated
- 3 garlic cloves, minced
- Zest and juice of 2 limes
- 3 tablespoons soy sauce
- 2 tablespoons honey
Coconut Rice
- 1 ½ cups jasmine rice
- 1 can coconut milk (13.5 oz)
- 1 cup water
- Pinch of salt
Garnish
- Fresh cilantro for garnish
Instructions
- Marinate the Pork: In a bowl, combine grated ginger, minced garlic, lime zest and juice, soy sauce, and honey. Add the boneless pork chops or tenderloin and mix well to coat. Let it marinate for 20 minutes to allow the flavors to infuse into the meat.
- Prepare the Rice: Rinse the jasmine rice under cold water until water runs clear to remove excess starch. In a pot, combine the rinsed rice with coconut milk, water, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the rice is cooked and liquid absorbed. Remove from heat and let it rest covered for 10 minutes to finish steaming.
- Sear the Pork: Heat a skillet over medium-high heat. Remove the pork from the marinade and sear the pork for 4 to 5 minutes per side until the exterior is golden brown and the internal temperature reaches 145°F (63°C) indicating it’s perfectly cooked.
- Rest and Serve: Let the pork rest for 5 minutes to allow juices to redistribute. Slice the pork thinly and serve it atop the fluffy coconut rice. Garnish with fresh cilantro for a bright and fresh aroma.
