  • 1/4 teaspoon salt
  • 1 teaspoon ground ginger
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the cheesecake.
  2. Prepare Springform Pan: Wrap the outside of a 9 or 10-inch springform pan with foil to protect it from water during the water bath baking process.

  4. Press the Crust: Press the crust mixture firmly onto the bottom and about one inch up the sides of the prepared springform pan to form an even layer.

  6. Add Sugar and Wet Ingredients: Add the brown sugar and beat until combined. Then add the sour cream, vanilla extract, and eggs one at a time, beating just until combined after each addition. Scrape down the sides and bottom of the bowl to ensure even mixing.
  7. Incorporate Spices and Molasses: Add the molasses, salt, ground ginger, cinnamon, nutmeg, and cloves to the cream cheese mixture, beating until fully combined.

  9. Prepare Water Bath and Bake: Place the springform pan into a larger pan and pour about an inch of hot water around it to create a water bath. Bake the cheesecake for 60 minutes.
  10. Cool in Oven: After baking, turn off the oven, remove the springform pan from the water bath, place it directly on the middle oven rack, and leave the oven door slightly open to let the cheesecake cool gradually.
  11. Chill: Once cooled, transfer the cheesecake to the refrigerator and chill for at least 8 hours or overnight until fully set.
