  • Author: Matteo
  • Total Time: 25 minutes
  • Yield: 12 servings 1x

Description

These Gingerbread Rice Krispie Treats offer a festive twist on the classic marshmallow snack. Infused with warm spices like ginger, cinnamon, and cloves, and enriched with molasses, these treats are perfect for holiday gatherings. Topped with a delicate drizzle of white chocolate spiced with cinnamon and ginger, and colorful sprinkles, they deliver both flavor and fun in every bite.

Ingredients

Scale

Base Mixture

  • ½ cup salted butter
  • 16 oz mini marshmallows
  • ¼ cup molasses
  • ½ teaspoon ground ginger
  • 1/8 teaspoon cloves
  • ¼ teaspoon cinnamon
  • 2 teaspoons vanilla extract
  • 9 cups Rice Krispie cereal

Topping

  • 2/3 cup white chocolate chips
  • 1 teaspoon butter
  • ¼ teaspoon cinnamon
  • 1/8 teaspoon ground ginger
  • Sprinkles (optional, for topping)

Instructions

  1. Prepare Baking Dish: Spray a 9×13 inch baking dish with non-stick spray or line it with parchment paper. Set it aside for later use.
  2. Melt Butter and Marshmallows: In a large pot over medium heat, melt the ½ cup of salted butter. Add the mini marshmallows, molasses, ground ginger, cloves, and cinnamon. Stir continuously until the mixture is completely melted and smooth.
  3. Add Vanilla and Cereal: Remove the pot from heat and stir in the vanilla extract. Immediately fold in the Rice Krispie cereal gently until it is fully coated and combined with the marshmallow mixture.
  4. Press into Baking Dish: Pour the mixture into the prepared baking dish. Lightly butter your fingers to prevent sticking, then press the mixture evenly and firmly into the dish to create an even layer.
  5. Cool to Room Temperature: Allow the Rice Krispie treats to cool and set at room temperature before adding the topping.
  6. Melt Topping Ingredients: In a heat-proof bowl set over a double boiler, combine white chocolate chips, butter, cinnamon, and ground ginger. Stir continuously with a rubber spatula until the chocolate is melted and smooth.
  7. Drizzle and Decorate: Drizzle the melted white chocolate mixture over the set Rice Krispie treats. Optionally, sprinkle festive sprinkles on top. Let the topping set completely before cutting into squares and serving.

Notes

  • Use parchment paper for easier removal and clean-up.
  • Lightly buttering your fingers prevents the sticky marshmallow mixture from sticking while pressing.
  • Allowing the treats to cool fully before drizzling the chocolate prevents melting and mixing.
  • Double boiler method ensures gentle melting of white chocolate without burning.
  • Store treats in an airtight container for up to 3 days for best freshness.
