  2. Mix fruit puree and honey: Pour the measured fruit puree into a large measuring cup or bowl. Add honey to the puree if desired and stir to combine well.
  3. Dissolve gelatin: In a small saucepan over medium-low heat, combine the measured juice and unflavored gelatin. Whisk constantly to avoid lumps.
  4. Heat mixture: Warm the gelatin and juice mixture for about 3 minutes, just until it is warm to the touch but not boiling. Ensure the gelatin is fully dissolved and the liquid looks clear or slightly opaque.
  5. Combine mixtures: Pour the warm gelatin mixture into the bowl with the fruit puree and honey. Whisk thoroughly to ensure everything is well blended.
  6. Prepare molds: Place silicone or plastic molds on a baking sheet to make handling easier.
  7. Pour into molds: Carefully pour the gummy mixture into the molds without overfilling. Alternatively, pour the mixture into a glass pan if you prefer gummy sheets.
  8. Set gummies: Let the gummies sit at room temperature for 1-2 hours to firm up and set.
  9. Freeze briefly: Place the baking sheet with molds or glass pan in the freezer for 15 minutes to make gummies easier to remove.
