Infamous Apple Curry is a unique and flavorful dish that combines the sweetness of apples with aromatic spices and hearty vegetables. - 1 cup coconut milk (or soy cream for cooking)
- 1 1/2 cups water
- 1 tsp salt
- 1 tbsp peanut butter
- 1 can adzuki beans (canned or cooked)
Instructions
- Heat the oil and sauté onions: In a large frying pan or saucepan, melt the coconut oil over medium-high heat. Add the diced onions and cook them while stirring until they start to brown, approximately 5 minutes.
- Add garlic and spices: Stir in the minced garlic, curry powder, garam masala, and tandoori masala quickly to prevent burning. Cook for about 1 minute to release the spices’ aromas.
- Add apples and vegetables: Combine the cubed apples, potatoes, courgette, and squash with the onions and spices. Stir well so everything is evenly coated, cooking for an additional 2 minutes while stirring frequently to avoid sticking.
- Add liquids and peanut butter: Pour in the coconut milk (or soy cream), water, salt, and peanut butter. Stir thoroughly to blend all ingredients, then bring the mixture to a boil over medium-high heat.
- Simmer the curry: Reduce heat to low-medium and allow the curry to simmer gently for about 15 minutes or until the potatoes and squash are tender. Stir occasionally to prevent sticking. Note that the apples may either stay intact or break down; both results work well.
- Incorporate adzuki beans: Stir the canned or cooked adzuki beans into the curry and continue simmering for at least 3 more minutes to heat the beans through.
- Rest before serving: Let the curry cool for about 10 minutes to allow the flavors and subtle apple sweetness to develop fully. Serve warm alongside rice, naan, popadoms, mango chutney, or red lentil flatbreads.
