Ingredients

Scale

Meats and Cheese

  • 4 slices Genoa Salami
  • 4 slices Mortadella
  • 4 slices Sopressata
  • 4 slices Pepperoni
  • 4 slices Provolone cheese (omit for dairy-free option)

Other Ingredients

  • Paleo Lime Mayo or store-bought mayo (such as Chosen Foods Avocado Oil Mayo)
  • Shredded lettuce
  • Extra toppings (optional): banana peppers, jalapeño peppers, roasted red peppers, black olives
  • Avocado oil or olive oil
  • Apple cider vinegar
  • Italian seasoning
  • Toothpicks

Instructions

  1. Layer Meats: Arrange the meat slices from largest to smallest, starting with Genoa salami, followed by mortadella, sopressata, and finally pepperoni.
  2. Spread Mayo: Apply a thin layer of mayo evenly on the meat stack, leaving a gap at the top edge of the largest slice to prevent the mayo from oozing out during rolling.
  3. Add Cheese and Toppings: Place a slice of provolone cheese about halfway down from the top of the stack, then add a small handful of shredded lettuce onto the lower half. Add any desired extra toppings such as banana peppers or olives.
  4. Roll Up: Using toothpicks ready for use, begin rolling the stack tightly from the bottom edge near the cheese, carefully pushing back any fillings that escape as you roll upward.
  5. Secure Roll: Once fully rolled, secure the outer edges of the meat with a toothpick to maintain shape.
  6. Prepare Dipping Sauce: In a small ramekin, mix two parts avocado or olive oil with one part apple cider vinegar, then sprinkle Italian seasoning on top for dipping.
  7. Serve and Store: Serve immediately by dipping roll-ups into the vinaigrette. Store any leftovers wrapped individually in plastic wrap in the refrigerator for up to one week, perfect for easy lunches.

Notes

  • For a dairy-free version, omit provolone cheese.
  • You can customize the toppings to your taste with peppers, olives, or other preferred vegetables.
  • Make sure to roll tightly to keep fillings from spilling out.
  • Store roll-ups wrapped tightly to preserve freshness up to one week.
  • This recipe is grain-free and perfect for a quick no-cook meal or snack.
