Instructions
- Make the lavender syrup: In a small saucepan, combine 1/2 cup water and 1/4 cup honey or simple syrup. Warm over low heat, stirring until the sweetener is fully dissolved. Remove from heat, add 1 tablespoon dried lavender, and steep for 10 to 15 minutes. Strain out the lavender and let the syrup cool completely.
- Add a whisper of rose: Stir in 1/2 teaspoon rosewater into the cooled syrup. Taste and add up to another 1/2 teaspoon if a stronger rose flavor is desired. Be cautious, as rosewater can quickly overpower the drink.
- Prep your glass: Fill a chilled highball or stemless wine glass with clear ice cubes. If you want a soft moonlit hue, add a tiny splash of unsweetened cranberry or pomegranate juice, or a drop of natural purple food coloring at this stage.
- Build the drink: Pour 1 to 1.5 ounces of the lavender-rose syrup into the glass, followed by 2 tablespoons of fresh lemon juice per serving.
- Top with bubbles: Gently add 6 to 8 ounces of cold sparkling water or club soda. Stir once or twice lightly to combine the ingredients without losing carbonation.
- Garnish and serve: Add a lemon wheel and a pinch of edible dried rose petals or a small sprig of fresh lavender or rosemary. Sip and adjust the sweetness or citrus to your preference.
