Cookie Dough
- ½ cup butter (softened)
- 1 cup sugar
- ¼ tsp baking soda
- ¼ tsp cream of tartar
- ¼ tsp salt
- 1 egg
- ½ tsp vanilla extract
- Zest of 1 lime
- Juice of 1 lime
- 1 ½ cups all-purpose flour
- 1–2 drops green food coloring (optional)
Glaze
- 1 tbsp butter (melted)
- Juice of 1 lime
- ¼ to ⅓ cup powdered sugar
Instructions
- Cream butter and sugar: Using a mixer, cream the softened butter and sugar together for 2-3 minutes until light and fluffy. Then add baking soda, cream of tartar, and salt, mixing well to combine.
- Add egg and vanilla: Mix in the egg and vanilla extract until fully incorporated and smooth.
- Add lime zest and juice: Zest one lime and add the zest to the dough. Squeeze the juice from the lime and add it to the mixture as well, blending thoroughly.
- Add flour and chill dough: Gradually add 1 ½ cups of flour to the wet ingredients, mixing until a dough forms. Cover the dough in an airtight container and chill it in the refrigerator for 2 hours to firm up.
- Form dough balls and coat: Scoop the chilled dough by the tablespoon and roll into balls. Roll each ball in granulated sugar to coat all sides evenly.
- Bake cookies: Place the sugar-coated dough balls onto a cookie sheet, spaced apart. Bake in a preheated oven at 375°F (190°C) for 8-10 minutes until the edges are lightly golden. Remove from the oven.
- Prepare glaze: While the cookies are still warm, mix melted butter and lime juice together. Gradually add powdered sugar, stirring continuously with a fork until the glaze reaches your desired consistency. Drizzle or spread a thin layer of glaze onto each cookie. Let the glaze set before serving.
