- 2 cups oyster crackers, crushed
- 35 Ritz crackers, crushed
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready for baking the casserole.
- Prepare Garlic Butter: In a saucepan, melt 6 tablespoons of butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute, to release its aroma and flavor.
- Cook Lobster Mixture: Stir in the lemon juice, sherry, and lobster meat into the garlic butter. Season with salt and pepper to taste. Cook for 2–3 minutes until the lobster is heated through. Then stir in the chopped parsley and remove the pan from the heat.
- Assemble Lobster Base: Transfer the lobster mixture into a greased baking dish or individual ramekins, spreading it evenly.
- Prepare Cracker Topping: In a separate bowl, combine the crushed oyster crackers and crushed Ritz crackers. Melt the remaining 6 tablespoons of butter and pour it over the cracker mixture. Stir thoroughly until all crackers are well coated with butter.
- Add Topping to Casserole: Evenly spoon the buttery cracker topping over the lobster mixture in the baking dish.
- Bake: Place the casserole in the preheated oven and bake for 12–15 minutes, or until the cracker topping is golden brown and the casserole is bubbling around the edges.
