Egg Mixture
- 2 cartons of Just Egg (about 34 oz; equivalent to one dozen chicken eggs)
- 1 tsp onion powder
- 1 tsp garlic powder

Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the right temperature for baking the quiches.
- Prepare Tortilla Cups: Gently press each gluten-free tortilla into an extra-large muffin tin, overlapping the sides slightly if needed, to form individual quiche shells.
- Mix Vegetables and Herbs: In a small bowl, combine the chopped mushrooms, kale, parsley, and chili flakes. Stir well to evenly blend the flavors.
- Assemble Veggies: Place one-sixth of the vegetable and herb mixture at the bottom of each tortilla cup, spreading evenly.
- Whisk Egg Mixture: In another bowl, whisk together the Just Egg cartons, onion powder, and garlic powder until smooth and fully combined.
- Fill Quiches: Pour the egg mixture over the veggies in each tortilla cup, making sure the mixture covers the filling evenly.
