Description

These Low Carb Gluten-Free Individual Quiches are perfect for a nutritious and fancy meal that is quick to prepare and bake. Made with Carbonaut Original Gluten-Free Tortillas and Just Egg, these quiches provide a balanced meal with plenty of veggies, plant-based cheese, and high protein. Each quiche contains the equivalent of two chicken eggs and makes a satisfying meal for any time of day.

Vegetable Mix

  • ½ cup chopped mushrooms
  • ½ cup chopped kale
  • 2 tbsp chopped onion
  • 1 tbsp minced fresh Italian parsley
  • 1 tsp chili flakes (optional)

Egg Mixture

  • 2 cartons of Just Egg (about 34 oz; equivalent to one dozen chicken eggs)
  • 1 tsp onion powder
  • 1 tsp garlic powder

Toppings

  • ¼ cup plant-based cheese shreds

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the right temperature for baking the quiches.
  2. Prepare Tortilla Cups: Gently press each gluten-free tortilla into an extra-large muffin tin, overlapping the sides slightly if needed, to form individual quiche shells.
  3. Mix Vegetables and Herbs: In a small bowl, combine the chopped mushrooms, kale, parsley, and chili flakes. Stir well to evenly blend the flavors.
  4. Assemble Veggies: Place one-sixth of the vegetable and herb mixture at the bottom of each tortilla cup, spreading evenly.
  5. Whisk Egg Mixture: In another bowl, whisk together the Just Egg cartons, onion powder, and garlic powder until smooth and fully combined.
  6. Fill Quiches: Pour the egg mixture over the veggies in each tortilla cup, making sure the mixture covers the filling evenly.
  7. Add Cheese Topping: Sprinkle plant-based cheese shreds evenly on top of each filled quiche for added flavor and texture.
