Instructions

  1. Prepare Hummus: If making hummus from scratch, blend 1 can of chickpeas, 2 tablespoons of tahini, 3 tablespoons of lemon juice, 2 cloves of garlic, and salt in a food processor until smooth. Adjust the texture with water as needed.
  2. Make Tzatziki Sauce: Combine 1 cup Greek yogurt, 1 medium cucumber (grated and drained), 1 clove minced garlic, 1 tablespoon olive oil, 1 tablespoon fresh dill, and salt to taste. Refrigerate for up to an hour to allow flavors to meld.
  3. Prepare Baba Ganoush: Roast 1 medium eggplant at 400°F (200°C) for 30-35 minutes until very soft. Scoop the flesh into a food processor and blend with 2 tablespoons tahini, 2 tablespoons olive oil, 2 tablespoons lemon juice, and salt to taste until creamy.
