Instructions

  1. Prepare the shrimp marinade: In a large bowl, combine olive oil, dried oregano, crushed red pepper, minced garlic, 1 tablespoon lemon juice, lemon zest, and the peeled, deveined shrimp. Toss everything together until shrimp are well coated.
  2. Heat the skillet: Place a large skillet over medium heat to warm up properly for cooking the shrimp.
  3. Cook the shrimp: Add the marinated shrimp to the heated skillet and cook for 5 to 6 minutes, flipping halfway through to ensure even cooking. The shrimp should turn pink and opaque.
  4. Prepare the rice: In a separate large bowl, combine the cooked white rice with the remaining 1 tablespoon lemon juice and 1 tablespoon fresh chopped parsley. Mix well to infuse the rice with citrus and herb flavors.
  5. Assemble the bowls: Divide the lemon-parsley rice evenly between two serving bowls.
  6. Add shrimp and salsa: Top each bowl of rice with the cooked shrimp, followed by a generous spoonful of tomato cucumber salsa.
  7. Finish with parsley and feta: Sprinkle the remaining chopped parsley over each bowl for freshness. Optionally, add crumbled feta cheese on top to enhance the Mediterranean flavors. Leave feta off for a dairy-free option.
