Scale
Shrimp Marinade and Cooking
- 1 tbsp olive oil
- ½ tsp dried oregano
- ¼ tsp crushed red pepper
- 2 cloves garlic, minced
- 2 tbsp lemon juice, divided
- 1 tsp lemon zest
- ½ lb large shrimp, peeled, deveined, and tails removed
Rice
- 2 cups cooked white rice
- 1 tbsp fresh parsley, chopped (divided)
Toppings
- 1 cup tomato cucumber salsa
- ¼ cup feta cheese, crumbled (optional)
Instructions
- Prepare the shrimp marinade: In a large bowl, combine olive oil, dried oregano, crushed red pepper, minced garlic, 1 tablespoon lemon juice, lemon zest, and the peeled, deveined shrimp. Toss everything together until shrimp are well coated.
- Heat the skillet: Place a large skillet over medium heat to warm up properly for cooking the shrimp.
- Cook the shrimp: Add the marinated shrimp to the heated skillet and cook for 5 to 6 minutes, flipping halfway through to ensure even cooking. The shrimp should turn pink and opaque.
- Prepare the rice: In a separate large bowl, combine the cooked white rice with the remaining 1 tablespoon lemon juice and 1 tablespoon fresh chopped parsley. Mix well to infuse the rice with citrus and herb flavors.
- Assemble the bowls: Divide the lemon-parsley rice evenly between two serving bowls.
- Add shrimp and salsa: Top each bowl of rice with the cooked shrimp, followed by a generous spoonful of tomato cucumber salsa.
- Finish with parsley and feta: Sprinkle the remaining chopped parsley over each bowl for freshness. Optionally, add crumbled feta cheese on top to enhance the Mediterranean flavors. Leave feta off for a dairy-free option.
Notes
- Use fresh lemon juice and zest for the best bright flavor.
- For a spicier bowl, increase the crushed red pepper quantity.
- Make the tomato cucumber salsa ahead of time to save prep.
- If dairy-free, omit feta cheese topping.
- Serve immediately for the best texture and taste.
