Description

These Mint Chocolate Chip Protein Balls are a delicious, no-bake snack packed with protein and a refreshing hint of peppermint. Perfect for a quick energy boost or a healthy treat, they combine creamy almond butter, oats, and mini dark chocolate chips for a satisfying bite.

Ingredients

Scale

Dry Ingredients

  • 1/2 cup (50g) rolled oats
  • 1/4 cup (30g) vanilla protein powder
  • 1/4 cup (40g) mini dark chocolate chips

Wet Ingredients

  • 1 cup (240g) almond butter
  • 2 tbsp (42g) honey
  • 1/4 tsp peppermint extract
  • 12 tbsp (15-30ml) unsweetened almond milk (if needed)

Instructions

  1. Combine ingredients: In a large mixing bowl, combine rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract. Mix thoroughly until well blended.
  2. Adjust consistency: If the mixture is too dry and crumbly, add unsweetened almond milk, one tablespoon at a time, mixing well until the mixture holds together but isn’t sticky.
  3. Fold in chocolate chips: Gently fold the mini dark chocolate chips into the mixture to evenly distribute them.
  4. Form balls: Scoop out about 1 tablespoon of the mixture and roll it into a tight ball with your hands. Repeat until all the mixture is used.
  5. Chill: Place the protein balls on a baking sheet lined with parchment paper to prevent sticking. Refrigerate for at least 20 minutes to allow them to firm up.
  6. Store: Transfer the chilled protein balls into an airtight container. Store them in the refrigerator for up to one week to keep them fresh.
  7. Serve and enjoy: Enjoy these tasty and nutritious Mint Chocolate Chip Protein Balls as a quick snack or post-workout treat.

Notes

  • If the mixture is too sticky, add a little more rolled oats to firm it up.
  • For a vegan option, substitute honey with maple syrup.
  • You can use any nut butter of choice if almond butter is unavailable.
  • Adjust peppermint extract carefully to avoid overpowering the flavor.
  • These protein balls can be frozen for up to 3 months; thaw before eating.
