Instructions

  1. Prepare the muffin tin: Line a regular muffin tin with paper liners, using only six. Set it aside to use later for the fudge cups.
  2. Melt chocolate mixture: Combine the white chocolate melting wafers and condensed milk in a large, microwave-safe bowl. Microwave the mixture in 20-second increments, stirring thoroughly after each interval until the chocolate is completely melted.
  3. Stir to smooth: Stir well after each microwaving interval. The residual heat will continue to melt the chocolate gently, preventing overheating or separation.
  4. Add pumpkin and mix-ins: Stir in the pumpkin puree, pumpkin spice, chopped walnuts or pecans (if using), and a few drops of orange gel food coloring to the melted chocolate mixture until smooth and well combined.
  5. Chill the fudge: Pour the finished mixture into the lined muffin cups. Refrigerate for 1-2 hours until the fudge has cooled and hardened.
