Instructions

- Prepare the BBQ honey sauce: While the chicken is cooking, whisk together the BBQ sauce and honey in a small bowl until smooth and combined. Then pour this mixture over the seared chicken in the skillet.
- Add rice and broth: Pour the long-grain rice and chicken broth into the skillet with the chicken and sauce. Stir gently to combine all ingredients evenly.
- Simmer with cover: Bring the mixture to a gentle simmer, then cover the skillet. Reduce heat to low and let it cook for about 20 minutes, allowing the rice to absorb the liquid and become tender.
- Add vegetables for steaming: During the last 5 minutes of cooking, evenly distribute the mixed vegetables over the rice and chicken. Keep the skillet covered to steam the vegetables until tender.
- Rest and serve: Remove the skillet from heat and let it sit covered for 5 minutes. Then fluff the rice with a fork, mix gently, and serve warm.
