Instructions

  1. Season and sear the chicken: In a large skillet over medium heat, season the chicken thighs or breasts with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear the chicken for about 5 minutes on each side until browned on the outside.
  2. Prepare the BBQ honey sauce: While the chicken is cooking, whisk together the BBQ sauce and honey in a small bowl until smooth and combined. Then pour this mixture over the seared chicken in the skillet.
  3. Add rice and broth: Pour the long-grain rice and chicken broth into the skillet with the chicken and sauce. Stir gently to combine all ingredients evenly.
  4. Simmer with cover: Bring the mixture to a gentle simmer, then cover the skillet. Reduce heat to low and let it cook for about 20 minutes, allowing the rice to absorb the liquid and become tender.
  5. Add vegetables for steaming: During the last 5 minutes of cooking, evenly distribute the mixed vegetables over the rice and chicken. Keep the skillet covered to steam the vegetables until tender.
  6. Rest and serve: Remove the skillet from heat and let it sit covered for 5 minutes. Then fluff the rice with a fork, mix gently, and serve warm.
