Ingredients

Scale

Pea Topping

  • 1 cup frozen peas
  • Small handful of pea shoots (optional)
  • 1/4 cup grated parmesan cheese
  • 3 tbsp olive oil
  • 1 tsp lemon juice
  • 1/2 clove garlic (save the other half for the bruschetta)
  • Salt and pepper to taste

Bruschetta

  • 6 slices ciabatta bread
  • 2 tbsp olive oil
  • 1/2 clove garlic
  • Pea shoots for garnish
  • Fresh parmesan for garnish
  • Lemon zest for garnish
  • Black pepper for garnish
  • Extra virgin olive oil for drizzling

Instructions

  1. Make the Pea Topping: Place the frozen peas, pea shoots, grated parmesan cheese, olive oil, lemon juice, half a clove of garlic, salt, and pepper into a food processor. Use the pulse button to chop and combine the ingredients until a rough paste forms. Set this mixture aside while you prepare the toast.
  2. Preheat the Broiler or Grill: Prepare your broiler or grill by heating it to high, ensuring it’s ready for toasting the bread slices.
  3. Prepare the Bread Slices: Drizzle the ciabatta slices evenly with 2 tablespoons of olive oil, coating the surfaces lightly to ensure crispiness and golden color when toasted.
  4. Toast the Bread: Place the slices under the broiler or on the grill. Toast each side for about 2-3 minutes until the bread is crisp and golden brown.
  5. Rub with Garlic: While the toasted bread is still warm, lightly rub each slice with the remaining half clove of garlic. This infuses the bread with a subtle garlic flavor.
  6. Assemble the Bruschetta: Spread the prepared pea topping evenly over each slice of toasted ciabatta. Add extra grated parmesan and fresh lemon zest on top, then place additional pea shoots over each bruschetta for extra freshness.
  7. Finish and Serve: Drizzle extra virgin olive oil over the assembled bruschettas and garnish with freshly cracked black pepper. Serve immediately to enjoy the contrast of crisp bread and creamy pea topping.

Notes

  • Use frozen peas to save prep time; no need to thaw before processing.
  • Pea shoots are optional but add a fresh, delicate flavor and attractive presentation.
  • Rubbing garlic on warm toast enhances the garlic flavor without overpowering it.
  • For a vegan option, omit parmesan or substitute with a vegan cheese alternative.
  • This recipe works well as a quick appetizer or light snack.
