Instructions
- Combine Ingredients: In a large bowl, add the diced cucumber, red bell pepper, dill pickles, roma tomato, red onion, chopped cilantro, jalapeños, and minced garlic. Pour in the pickle brine and freshly squeezed lime juice. Gently toss all the ingredients together until well mixed and evenly coated.
- Chill: Cover the bowl and refrigerate the mixture for at least 30 minutes. This resting time allows the flavors to meld together and enhances the tangy, fresh taste.
- Serve: Once chilled, give the Pickle de Gallo a quick stir and season with salt to taste. Serve it alongside your favorite chips, or as a flavorful topping for hot dogs, nachos, tacos, or burgers.
