Rice & Oils

  • 3 cups cooked brown rice (preferably chilled)
  • 2 tablespoons vegetable oil, divided
  • 1 tablespoon sesame oil

Seasonings & Sauces

  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon oyster sauce

Instructions

  1. Heat the oil and cook chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Season the diced chicken breasts with salt and pepper, add to the skillet, and cook for about 5-6 minutes until golden brown and fully cooked. Remove and set aside.
  2. Sauté onion and garlic: Add the remaining tablespoon of vegetable oil to the same skillet. Add the diced onion and minced garlic, sautéing for 2-3 minutes until the onion becomes translucent and fragrant.
  3. Scramble the eggs: Push the onion and garlic to one side of the skillet. Pour the beaten eggs into the empty side and scramble until fully cooked. Then combine the eggs with the onion and garlic mixture.
  4. Add rice and stir-fry: Add the chilled brown rice to the skillet, breaking up any clumps with a spatula. Stir-fry the mixture for about 3 minutes until the rice is heated through.
  5. Combine all ingredients: Stir in the frozen peas and carrots, cooked chicken, soy sauce, oyster sauce, and sesame oil. Mix well and continue cooking for another 2-3 minutes to allow flavors to meld.
  6. Add green onions and serve: Remove the skillet from heat, stir in the sliced green onions, and combine thoroughly. Serve the chicken fried rice warm, garnished with sesame seeds if desired.

  • Using chilled, day-old brown rice helps prevent the dish from becoming mushy.
