Ingredients

Scale

Meat and Spices

  • 1 lb ground lamb
  • 1 tsp ground cumin
  • 1 tsp ground sumac
  • ½ tsp ground cinnamon
  • 1 tsp smoked paprika
  • ¼ tsp red pepper flakes
  • Salt and pepper to taste

Vegetables and Herbs

  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • ¼ cup fresh parsley, chopped

Others

  • 2 tbsp olive oil
  • 4 flatbreads (6–8 inches each)
  • Optional: plain yogurt or tzatziki for serving
  • Optional: lemon juice for serving

Instructions

  1. Prepare ingredients: Finely chop the onion, mince the garlic, and roughly chop the parsley. Measure out the spices to have everything ready for cooking.
  2. Sauté onion: Heat 2 tablespoons of olive oil over medium heat in a large skillet. Add the chopped onion and cook until translucent and soft, approximately 4 minutes.
  3. Add garlic: Stir in the minced garlic and sauté for another minute until fragrant, taking care not to let it burn.
  4. Cook lamb: Add the ground lamb to the skillet, breaking it up with a spoon. Increase the heat to medium-high to help brown the meat evenly.
  5. Season lamb: Sprinkle in the cumin, sumac, cinnamon, smoked paprika, red pepper flakes, salt, and pepper. Stir frequently and continue cooking until the lamb is fully browned, about 8 to 10 minutes.
  6. Warm flatbreads: While the lamb cooks, warm the flatbreads by placing them in a dry skillet over low to medium heat for 1 to 2 minutes on each side, or alternatively wrap them in foil and heat in a 350°F oven for 5 minutes.
  7. Finish lamb: Remove the skillet from heat and stir in the chopped parsley to add freshness.
  8. Assemble flatbreads: Spoon the spiced lamb mixture onto the warmed flatbreads. Add a drizzle of plain yogurt or a squeeze of lemon juice if desired for extra flavor.
  9. Serve immediately: Enjoy this fragrant Turkish lamb flatbread while hot for best taste.

Notes

  • Ground lamb can be substituted with ground beef or turkey if preferred.
  • Sumac adds a lemony tang; if unavailable, substitute with a squeeze of fresh lemon juice.
  • You can prepare the lamb mixture ahead and reheat before serving for convenience.
  • Serving with a side of fresh salad or pickled vegetables complements the flavors well.
  • Adjust red pepper flakes to control the spice level.
