Ingredients
Scale
Main Ingredients
- 1 can (8 rolls) crescent roll dough
- ½ pound breakfast sausage
- 4 large eggs
- ½ cup shredded cheese (cheddar or mozzarella)
- 1 tbsp butter
- 2 tbsp milk
- Salt & pepper to taste
Optional Add-Ins
- Diced bell peppers
- Cooked bacon crumbles
- Green onions
- Hot sauce for an extra kick
Instructions
- Cook the Sausage: Heat a skillet over medium heat. Add the breakfast sausage and cook, breaking it into crumbles, until fully browned and cooked through. Drain excess grease and set the sausage aside.
- Scramble the Eggs: In the same skillet, melt the butter over medium-low heat. In a bowl, whisk together eggs, milk, salt, and pepper. Pour the egg mixture into the skillet and cook over low heat, stirring occasionally, until the eggs are just set but still moist. Remove from heat.
- Assemble the Roll-Ups: Preheat your oven to 375°F (190°C). Unroll the crescent roll dough and separate it into triangles. On each triangle, spoon a portion of the cooked sausage, then add scrambled eggs and sprinkle shredded cheese on top. Optionally add diced bell peppers, bacon crumbles, or green onions. Starting from the wide end, carefully roll each triangle up tightly and place it seam-side down onto a parchment-lined baking sheet.
- Bake to Perfection: Bake the assembled roll-ups in the preheated oven for 12 to 15 minutes, or until they are golden brown and the dough is fully cooked. Remove from oven and allow to cool slightly before serving.
Notes
- Drain excess grease from sausage to prevent soggy roll-ups.
- Customize with optional add-ins like veggies or bacon for extra flavor.
- For a healthier version, swap crescent dough with low-carb tortillas or gluten-free dough.
- Roll-ups can be made ahead and refrigerated overnight; reheat before serving.
- To freeze, wrap individually and store in a freezer-safe bag for up to two months. Reheat in oven or microwave.
- Serve with dipping sauces such as salsa, ketchup, or spicy mayo for extra taste.
