Ingredients
Scale
Proteins
- 1 lb Pork, sliced (can substitute with chicken or tofu)
Vegetables
- 2 cups Cabbage, chopped (can substitute with bok choy or bell peppers)
- 1 cup Mushrooms, sliced (use shiitake or button mushrooms)
- 1 cup Green Onions, chopped (shallots can be used if unavailable)
- 3 cloves Garlic, minced (fresh is best)
- 1 tbsp Ginger, grated (fresh is preferred)
Noodles & Sauces
- 8 oz Thick Noodles (Chow Mein or Lo Mein)
- 1/4 cup Soy Sauce (low-sodium for a healthier option)
Other
- Cooking oil (amount as needed for stir-frying)
Instructions
- Marinate pork: In a bowl, combine sliced pork with soy sauce, minced garlic, and grated ginger. Let the mixture marinate for at least 10 minutes to absorb the flavors.
- Cook noodles: Bring a large pot of salted water to a rolling boil. Add thick chow mein or lo mein noodles and cook according to package instructions until al dente, typically about 5-7 minutes. Drain and rinse with cold water to stop cooking and prevent sticking.
- Stir-fry pork: Heat a large pan or wok over high heat and add oil. Once the oil shimmers, add the marinated pork and stir-fry for about 3-4 minutes until browned and cooked through. Remove the pork from the pan and set aside.
- Cook vegetables: In the same pan, add more oil if necessary. Toss in chopped cabbage, sliced mushrooms, and chopped green onions. Stir-fry for about 4-5 minutes until vegetables are tender yet still crisp.
- Combine and finish: Return the cooked pork to the pan with the sautéed vegetables. Add the drained noodles and pour in a splash of soy sauce. Toss everything together over heat for an additional 2-3 minutes to combine flavors and warm through.
- Serve: Transfer the Shanghai Fried Noodles to plates or a serving platter. Garnish with additional sliced green onions or sesame seeds if desired, and serve hot.
Notes
- For a vegetarian version, substitute pork with tofu and use vegetable soy sauce and vegetable broth if needed.
- Use low-sodium soy sauce to reduce salt content.
- Adjust vegetables according to availability and preference.
- Ensure high heat during stir-frying for best texture and flavor.
- Marinating the pork is key for enhanced flavor.
