Ingredients

Scale

Brown Sugar Cookies

  • 125g salted butter, room temperature (1/2 cup + 1 tbsp)
  • 100g light brown sugar (1/2 cup, packed)
  • 50g granulated sugar (3 tbsps + 2 tsps)
  • 1 tsp vanilla extract
  • 1 large egg, room temperature
  • 1 tsp double cream or heavy cream
  • 220g plain flour or all purpose flour (1 cup + 1/4 cup + 2 tbsps)
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 30g granulated sugar for coating cookie dough balls (2 tbsps + 1 tsp)

Whipped Cream Cheese Frosting

  • 100ml double cream or heavy cream (1/4 cup + 3 tbsps)
  • 1/2 tsp vanilla extract
  • 1 heaped tbsp icing sugar or powdered sugar
  • 100g cream cheese, room temperature (1/4 cup + 3 tbsps)

Assembly

  • Fresh strawberries, chopped
  • Strawberry jam
  • Biscuit crumbs or graham cracker crumbs

Instructions

  1. Make the Cookie Dough: In a large mixing bowl, combine the room temperature salted butter, light brown sugar, and granulated sugar. Mix thoroughly with a mixer or spoon until the mixture becomes thick, creamy, and fully blended.
  2. Add Wet Ingredients: Add the egg, heavy cream, and vanilla extract to the butter and sugar mixture. Mix until everything is fully combined and smooth.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the plain flour, baking powder, and baking soda. Gradually fold this dry mixture into the wet ingredients using a silicone spatula or spoon. Stir gently until just combined, being careful not to overmix to keep the cookies tender.
  4. Chill the Dough: Cover the bowl and refrigerate the cookie dough for about 1 hour to allow it to firm up, which will help with shaping and baking.
  5. Prepare to Bake: Preheat your oven to 180°C (350°F) about 10-15 minutes before baking. Line a baking sheet with parchment or baking paper.
  6. Shape the Cookies: Remove the chilled dough from the fridge. Divide it into 90g portions or use a cookie scoop for even sizing. Roll each dough ball in the granulated sugar to coat them evenly, then place them spaced out on the baking sheet.
  7. Bake: Bake the cookies at 180°C (350°F) for 15-18 minutes, depending on their size. The cookies should be golden and slightly firm but still soft to the touch when done.
  8. Cool: Remove the baking sheet from the oven and allow the cookies to cool completely on the sheet to prevent breakage during transfer.
  9. Prepare Frosting: In a bowl, add cold double cream, vanilla extract, and icing sugar. Whip using a mixer until soft peaks form, being careful not to overwhip. Then, add the cream cheese and whip again until the mixture is thick, soft, and holds medium peaks with a slight curl.
  10. Assemble Cookies: Spread a generous amount of the cream cheese frosting onto each cooled sugar cookie. Top with a dollop of strawberry jam, then add freshly chopped strawberries over the frosting. Finally, sprinkle each cookie with graham cracker crumbs or biscuit crumbs for added texture.
  11. Serve: Your strawberry cheesecake cookies are ready to enjoy fresh. Store leftovers in the refrigerator to maintain freshness.

Notes

  • If using unsalted butter, add 1/4 tsp salt to the dry ingredients to balance the flavor.
  • The heavy cream in the cookie dough can be omitted if you prefer a different texture, but it adds moisture and richness.
  • Baking times will vary depending on cookie size. This recipe is designed for 6 cookies weighing 90g each, baked for 18 minutes. Smaller cookies require less time.
  • Do not underbake the cookies too much as they will soften further under the frosting.
  • Keep frosted cookies refrigerated to ensure freshness and maintain structure of the frosting.
