A refreshingly sweet and hydrating salad combining juicy watermelon, fresh strawberries, crisp cucumber, tangy goat’s milk feta, and aromatic mint, all tossed in a zesty balsamic or lemon poppyseed dressing. Perfect as a vibrant summer side or light meal.

Salad Ingredients
- 2 cups of sliced organic strawberries
- 2 cups of cubed organic watermelon
- 2 cups of semi-thick cucumber rounds sliced in half
- Handful of fresh mint leaves (basil also works nicely)
- 3/4 cup of crumbled goat’s milk feta
- 1 tsp of sumac
Balsamic Vinaigrette
- Juice of 1 lemon
- 1/3 cup of balsamic vinegar
- Sea salt and coarse black pepper to taste
- 2–3 tablespoons of extra virgin olive oil or avocado oil
Homemade Lemon Poppyseed Dressing (optional)
- 3 tablespoons of raw honey
- 3 tablespoons of white vinegar or apple cider vinegar
- 2 tablespoons of extra virgin olive oil
- 1 tablespoon of lemon juice
- 3 tablespoons of real, full-fat mayonnaise
- 1 tablespoon of poppy seeds
- 1/2 cup of full fat Greek yogurt
Instructions
- Prepare Ingredients: Slice the organic strawberries, cube the organic watermelon, and cut the cucumbers into semi-thick rounds and slice them in half. Set aside the fresh mint leaves and crumble the goat’s milk feta.
- Make Dressing: Whisk together all ingredients for your choice of dressing. For the balsamic vinaigrette, mix lemon juice, balsamic vinegar, sea salt, black pepper, and olive or avocado oil until well combined. Alternatively, whisk together honey, white or apple cider vinegar, olive oil, lemon juice, mayonnaise, poppy seeds, and Greek yogurt for the lemon poppyseed dressing.
- Toss Salad: Place all salad ingredients into a large bowl. Add the sumac and pour over your preferred dressing.
- Combine and Garnish: Gently toss everything to coat well with the dressing. Garnish with additional fresh mint leaves for an aromatic and fresh finish.
- Serve: Serve the salad cold immediately for best texture and flavor. If preparing ahead, keep the dressing separate and toss just before serving to prevent wilting and fermentation. Enjoy it paired perfectly with a glass of cold rosé.

- The salad is best served fresh to maintain crisp textures and vibrant flavors.
- You may customize by adding mango chunks, thinly sliced pickled red onions, raspberries, fresh basil leaves, or swapping feta for goat cheese, burrata, or mozzarella balls.
- For a seasonal variation, consider adding asparagus, organic baby spinach, fresh organic arugula, or lemony massaged kale as a salad base.
- Sumac adds a lovely tangy, lemony note that enhances the salad’s flavor profile.
