  • ¼ cup apple cider vinegar
  • 3 tablespoons corn oil (or any neutral oil)
  • ¼ cup lime juice (fresh recommended)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • Salt and black pepper, to taste

Instructions

  1. Prepare Marinade: In a large zip-style bag, combine sweet chili sauce, soy sauce, apple cider vinegar, corn oil, lime juice, minced garlic, minced ginger, salt, and black pepper. Seal the bag and gently squish to blend all ingredients evenly.
  2. Flatten Chicken: Place chicken breasts between two pieces of plastic wrap and lightly flatten them using a rolling pin or meat mallet to an even thickness. This helps the chicken absorb the marinade better and ensures even cooking.
  3. Marinate Chicken: Add the flattened chicken breasts to the prepared marinade bag. Seal tightly and refrigerate for at least 2 hours, or up to 24 hours for maximum flavor infusion.
  4. Preheat Grill: When ready to cook, preheat your grill to medium-high heat to provide the perfect searing temperature for juicy grilled chicken.
  5. Grill Chicken: Remove chicken from the marinade, place on the grill, and cook for 3 to 4 minutes per side. Occasionally spoon some marinade over the chicken to keep it moist and flavorful. Grill until the internal temperature reaches 165°F (74°C) for safe consumption.
