Instructions
- Prepare Poaching Water: Fill a medium saucepan with about 3 inches of water and bring it to a gentle simmer over medium heat. Add 1 tablespoon of white vinegar to the water to help the egg whites coagulate faster. Make sure the water is not boiling vigorously.
- Toast the Bread: Toast the bread slices in a toaster or on a grill pan until they become golden and crisp, approximately 3-4 minutes.
- Make the Avocado Spread: Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Add 1 teaspoon of fresh lemon juice, a pinch of flaky sea salt, and black pepper. Mash the ingredients with a fork until mostly smooth but retaining some chunks. Adjust salt and pepper to taste.
