Instructions

  1. Prepare Poaching Water: Fill a medium saucepan with about 3 inches of water and bring it to a gentle simmer over medium heat. Add 1 tablespoon of white vinegar to the water to help the egg whites coagulate faster. Make sure the water is not boiling vigorously.
  2. Toast the Bread: Toast the bread slices in a toaster or on a grill pan until they become golden and crisp, approximately 3-4 minutes.
  3. Make the Avocado Spread: Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Add 1 teaspoon of fresh lemon juice, a pinch of flaky sea salt, and black pepper. Mash the ingredients with a fork until mostly smooth but retaining some chunks. Adjust salt and pepper to taste.
  4. Poach the Egg: Crack a large fresh egg into a small bowl or ramekin. Stir the simmering water gently to create a swirl, then carefully slide the egg into the water. Let it poach undisturbed for 3-4 minutes to achieve a runny yolk. Use a slotted spoon to lift the egg from the water and let excess liquid drain.
  5. Assemble the Toast: Spread a generous layer of mashed avocado over the toasted bread slices. Place the poached egg gently on top. Sprinkle approximately 1 teaspoon of everything bagel seasoning over the egg and avocado, and finish with a pinch of flaky sea salt if desired.
